Garlic Herb Pork Tenderloin

TOTAL TIME: 25 minutes

YIELD: 4 servings

If you don’t have fresh herbs for this dish, you can use dried. I would recommend rubbing the herbs between your hands to release the flavor first.

INGREDIENTS

1 tablespoon olive oil

1 tablespoon fresh rosemary, minced

2 tablespoons fresh Italian parsley, minced, divided

1 tablespoon fresh basil, minced

Salt and pepper, to taste

4 cloves garlic, minced

1½ pound pork tenderloin

INSTRUCTIONS

1. Preheat the oven to 425°F. Line a rimmed 9×13-inch sheet pan with parchment paper or coat with nonstick cooking spray.

2. In a small bowl, combine olive oil, herbs, salt and pepper, and garlic.

3. Place pork on the sheet pan. Rub with the olive oil/herb mixture.

4. Bake for 15 minutes, or until tenderloin reaches an internal temperature of 145°F.

5. Remove from the oven and allow to rest for 10 minutes. This will help the tenderloin keep its juiciness.
